I was born in South Wales. I always remember my grandmother would make lunches for my grandfather and his son to take down the mines the following day. My grandmother would then pack those in what was called a tommy box to protect them from the rodents which were inevitably are down the mines.
Those fillings had to offer something to the guys who worked under ground. That something was a good strong taste. When you eat something it’s got to have some flavour otherwise you get no benefit at all.
From the day the cheese is made to the day the cheese is consumed it’s developing flavour. Collier's has a particular taste and we were the first people to introduce this balance between savoury and slight sweetness that slow release and very long and deep character.
What we’re looking at for Collier's is something that’s going to develop, that’s going to turn into something just that bit special.

The Collier's brand founded in 2004. Made to a single recipe and created on firm principles: to deliver the finest quality cheddar cheese, with a distinctive, long and powerful taste.
The idea for the Collier’s brand was sparked by Wales’s proud industrial heritage. Collier’s Powerful Cheddar’s characteristics are those of the Welsh coal miners: reliability, power and integrity.
Cheese was an important part of the miners’ diet. Collier’s founder’s grandfather was a miner. As a child our founder was struck by the strength of the mining community and the sense of camaraderie from the miners who worked in such harsh, dangerous conditions.
As you would expect with something so special, the exact Collier's recipe is a closely guarded secret. Using carefully selected milk to a single recipe, it is matured for up to 20 months, then graded to ensure it has attained the excellence required be selected as Collier’s Powerful Cheddar.
Collier's Powerful Cheddar delivers an extraordinary taste sensation. This uniquely powerful cheese produces a fine balance of savoury and sweet, without the sharpness that is delivered by many strong cheddars.
Collier’s has a distinct texture, open, slightly crumbly, yet smooth and creamy in the mouth. Unusually, it contains tantalising "crunchy bits" which are actually calcium lactate grains that develop during maturation and are evidence of the cheese’s high quality.
